KADAI CHICKEN
To marinade:
1/2 kg boneless chicken, cubed
1/2 cup curds
1 tbsp Mangalore Chilli Masala Powder
1 tbsp ginger garlic paste
1 tbsp soya sauce
salt to taste
Method :
1. Prepare the marinade by mixing all the ingredients & beat with a fork.
2. Add the chicken & mix well.
3. Keep in the refrigerator for a couple of hours.
To cook :
Ingredients :
2 medium onions, chopped
2 tomatoes, chopped
2 capsicum, cubed
salt
ghee
Mangalore Chilli Masala Powder
Method :
1. Heat 1 tsp of ghee in a small cooker. Add half of the onions & fry till pink. Add the marinated chicken & the marinade. Pressure cook for 10 minutes adding only a few tbsps of water.
2. In the meanwhile melt 1 tsp ghee in a kadai. Add the rest of the onions & fry till transparent. Add tomatoes & fry for a minute. Add capsicum & fry till done.
3. Remove the chicken. Make sure its almost dry. If not evaporate the liquid. Add chicken to the kadai. Mix well. Check the taste. Add salt & chilli powder if required.
4. Remove from heat & garnish.
5. Serve with steamed rice or phulkas.
