Ingredients :
2 large potatoes
ghee
1 chopped onion
1 small chopped tomato or 1/2 tsp tamrind paste
1/ 8 tsp mustard seeds
1/8 tsp Jeera
few curry leaves
1/2 coconut, grated
Mangalore Chilli Masala Powder
salt to taste
coriander leaves for garnish
Method :
1. Pressure cook potatoes till done. Peel the skin & cube them. Keep aside.
2. Melt ghee. Add mustard seeds. When they pop add jeera & curry leaves. Add & saute onion. Fry till pink. Add chopped tomato & fry till soft. Add the coconut fry & add the chilli powder.
3. Add the potatoes and mix well. Add 1/4 cup water, tamrind paste ( only if u r not adding tomato ) & salt to taste.
3. Cover & cook till dry. Stir in between so that the potatoes do not stick to the pan.
4. Garnish with coriander leaves & serve with chapatis.
